Ab dem 18./19. Jahrhundert ist der Fokus auf physiologisch-medizinische Aspekte gerichtet. Es ueberwiegen teils naturwissenschaftliche, teils naturheilkundliche Betrachtungen. Im Nationalsozialismus dominieren ernahrungspolitische Gruende die Ernahrungsforschung. In diesem ideologischen Kontext entsteht die Vollwerternahrung. Nach 1945 setzen einige Protagonisten ihre Arbeit fuer vollwertige Ernahrung kontinuierlich fort - z.B. in der Deutschen Gesellschaft fuer Ernahung (DGE), der Vitalstoffgesellschaft, der Reformhaus- oder Okobewegung. Erst die Sichtweise von Ernahrung als einem vieldimensionalen System ermoglicht es Ernahrungswissenschaftlern seit 1993, mit der Vollwerternahrung gleichermassen medizinische, okologische und gesellschaftliche Aspekte zu beruecksichtigen.
